Last Call Hospitality Group, known for popular Miami venues like Sweet Caroline Karaoke Bar and Tipsy Flamingo, has launched a new Latin American restaurant called Tambo. Located inside the Gates Hotel at 2360 Collins Ave. in South Beach, Tambo offers a vibrant dining experience featuring ceviche, craft cocktails, and juicy steaks.
Tambo’s menu is a celebration of Latin flavors, with a variety of options to satisfy different palates. Cold starters include the signature "Tambo Ceviche," which blends corvina with mango and cilantro in a zesty leche de tigre, served with malanga chips. Other exciting dishes feature fresh tuna wrapped in malanga and a striking hamachi gazpacho that is served tableside.
The hot starters are equally delightful, offering items ranging from brioche carrillera bites with braised beef cheek and manchego to lavender-glazed chicharrón served with yuca purée. Larger plates include a Brazilian-rubbed hanger steak with coffee-ají chimichurri and a saffron arroz con pollo brimming with wild mushrooms.
Desserts are crafted by pastry chef Maria Torres, who creatively merges Latin and French techniques. Noteworthy options include passion fruit merengón and yuzu milhojas, a stack of puff pastry filled with pastry cream and housemade caramel.
The restaurant’s interior is designed to let in natural light, featuring a combination of white banquettes, wooden chairs, and tropical plants that contribute to an indoor-outdoor ambiance.
