James Beard Award-winning Chef Erick Williams is on a mission to revive the narrative surrounding Black mixology through his efforts at the acclaimed restaurant and bar, Virtue. Collaborating with award-winning mixologist Paul McGee, Chef Williams pays homage to Tom Bullock, a pioneering Black bartender from the Prohibition era, by modernizing his classic cocktails.
In an exclusive interview, Chef Williams discussed the inspiration behind this initiative, emphasizing the importance of highlighting Black contributions to America’s cocktail culture. He acknowledged that Black mixology history is rarely celebrated in mainstream platforms and saw an opportunity to expand the narrative that Virtue embodies, which includes Black food, music, and art.
Bullock’s book, The Ideal Bartender, particularly inspired the cocktail menu due to its balance and nuance, surprising Chef Williams with the depth of flavors in the Prohibition-era recipes. He expressed the significance of honoring this history, noting that Black contributions to hospitality and cocktail-making have often gone unrecognized. By introducing drinks like the Busy Izzy Highball, the Overall Julep, and the Blackthorn Cocktail, Chef Williams invites patrons to experience the layered storytelling behind each cocktail.
Chef Williams also highlighted the seamless integration of Cantina Rosa into Virtue’s creative vision. Cantina Rosa focuses on agave spirits and showcases the cultural impact of Hispanic bartenders, reinforcing the idea of cultural experiences being accessible through various lenses.
Reflecting on Tom Bullock’s story, Chef Williams pointed out that Bullock’s work has only recently begun to receive the recognition it deserves, describing it as a hidden treasure that deserves a spotlight. He shared encouraging words for aspiring Black chefs and bartenders, urging them to remain authentic and true to their backgrounds while cultivating their unique narratives.
