As summer heats up, many find themselves overwhelmed by the abundance of events and strong cocktails, leading to a desire for something lighter. Low-alcohol and non-alcoholic cocktails are gaining traction globally, particularly among younger drinkers seeking flavorful options with less intensity. A recent Gallup survey revealed that a lower percentage of young adults (ages 18 to 34) consume alcohol now compared to previous decades.
To explore this trend, a visit to Arbor in Hayes Valley was in order, where a new low-ABV cocktail menu had been introduced just in time for the summer season. Known for its delicious food and exquisite patio, Arbor promised a refreshing escape from the city bustle.
This visit was about learning the crafting of three unique low-ABV cocktails with General Manager Daniel Torres. He shared that the menu’s evolution was in response to changing consumer preferences, stating, “The times are changing. It seems like young people, new generations, they don’t drink as much.”
Despite Arbor’s limited bar space, Torres highlighted three featured cocktails crafted for speed and flavor: the Bicicletta, Strawberry Cobbler, and Adonis.
The Bicicletta is inspired by the original Italian cocktail that was designed to be easier on drinkers, enabling them to return home without trouble. At Arbor, it is composed of 3 ounces of French Sauvignon Blanc and 2 ounces of Aperol—stirred over ice and served with a twist of lemon peel. This variant balances Aperol’s bitterness with the wine’s acidity for a refreshing sip.
Next, the Strawberry Cobbler reintroduces sherry, a spirit not commonly found today. Torres’s version combines 3 ounces of Amontillado sherry and a dash of homemade strawberry and balsamic syrup. Shaken with ice and served over crushed ice, it garners fresh basil, providing a delightful contrast to the strawberry sweetness.
Lastly, the Adonis cocktail showcases a blend of Bodegas Hidalgo Amontillado and Cinzano Rosso vermouth with hints of Angostura bitters, served in a stylish glass. While this drink, resembling an old-fashioned, might not have been the favorite, it effectively captured the essence of its stronger counterpart with lower alcohol content.
Torres is already experimenting with ideas for additional low-ABV classics, including a cucumber gimlet and a mezcal margarita. For now, post-tasting, a delightful retreat to the patio with the Strawberry Cobbler in hand was the perfect way to bask in the sun and enjoy the summer vibe.
