In January 2024, Battaglini partnered with Chef Johnny McDermott to reimagine Pony, focusing on a diverse menu that uses regional ingredients with global flair. Despite some delays, the new concept officially launched last December. McDermott emphasizes creating a dynamic menu that is ever-changing while retaining staple dishes like steak frites and brick chicken. The restaurant’s atmosphere is casual yet focused on providing a sophisticated culinary experience without pretentiousness.
Cocktails play a significant role at Pony, with Battaglini returning to mixology after years of focusing on food.
